Understanding Gluten Free

This might be one of the latest fads for some people who choose to eat healthier and choose to be on a gluten free diet but for those with Celiac disease or wheat allergies, there is no choice! 

Both are caused by a reaction to protein found in wheat, barley and rye. The difference in the two are, celiac disease is an autoimmune disorder to only gluten, and wheat allergies are an immune response to any of the different proteins found in those foods, along with the gluten. 

Symptoms of a wheat allergy usually occurs within minutes of wheat consumption but can take up to two hours after.

A wheat allergy, like other allergic reactions, can range from mild to life-threatening.  Wheat allergies can have symptoms of: Nausea up to vomiting  Diarrhea  Mouth and throat irritation  Sinus congestion  Rash and/or hives Irritation of eyes Severe Breathing difficulties (Anaphylaxis)

Celiac disease also has serious health issues which can include permanent damage to intestinal organs. It’s an autoimmune disorder that causes your immune system to respond abnormally to gluten. This abnormal response causes the immune system to destroy the villi (parts of the small intestine that absorbs nutrients) which can lead to malnutrition and other health problems. Ultimately, the organ literally attacks itself causing extreme discomfort and pain for the person. 

People with celiac disease suffers if they ingest any amount of gluten. 

For children the symptoms can be: Delayed puberty  Shortness  Irritability in mood Weight loss Dental defects  Other health issues due to lack of nutrients. 

Diagnosing adults with celiac disease is difficult because symptoms mimic many other chronic conditions.

In Adults the symptoms can be: Abdominal bloating  Intestinal gas Chronic diarrhea Constipation Foul-smelling stool Stomach pain Nausea and/or vomiting Digestive symptoms  Fatigue  Headaches Anemia Osteoporosis  Depression  Anxiety  Joint pain  Canker sores Infertility or miscarriages Missed menstrual period Tingling of hands and feet

Lately there has been a new increase of people who don’t have any allergies to wheats nor do they have celiac disease but have had related gluten conditions and symptoms. Researchers are trying to find the exact cause for this unknown occurrence. The newly discovered condition is called;  Non-Celiac Gluten Sensitivity (NCGS). 

The most common symptoms of NCGS is: Mental fatigue (brain fog) Fatigue  Abdominal pain  Gas, Bloating Headache 

No matter which degree it is, celiac disease has become a huge issue in many people’s lives today and seems more common in the last few years. People with celiac disease do not eating gluten free food because they choose to, they literally have no choice. 

Their life is consumed with this huge factor that they can no longer live as simple as others. Like having the freedom to stop by any restaurant to eat or simply order anything they want off a menu because the results could be devastating for them. 

Celiac disease ultimately changes a person’s life completely but once accustomed to the requirements of the disease, the person can live without the pain and suffering. 

Please remember to have patience and be understanding of those with Celiac disease. Especially when trying to go out to eat.
